Instructions for Green and White Asparagus with Shrimp

Step 1
White asparagus is actually the same as green asparagus. Since it is covered with soil throughout its growth, it does not undergo photosynthesis, hence appearing very white.
Step 2
The ingredients are very simple, but the white asparagus needs to have its outer skin removed.

Wash the asparagus, cut into large pieces, and mix soy sauce, sea salt, black pepper, starch, and water to make a seasoning mixture.

Heat oil, stir-fry the shrimp with sea salt and cooking wine until it changes color, then remove from heat.

Add the asparagus and stir-fry over medium heat until it changes color.

Add the seasoning mixture and the shrimp, stir-fry until well combined.

This dish is very simple and delicious, crispy and juicy, with the perfect balance of sweetness and saltiness, as well as a unique grassy fragrance.

Personally, I think pan-frying the asparagus is tastier than boiling, but it’s a bit more expensive.
