Recipe for Colorful Vegetable Zhajiangmian

Step 1
Pour some salad oil into a pan, add diced pork belly, and cook over low heat. If you don’t like fatty meat, you can also use pork tenderloin.
Step 2
Stir-fry diced scallions, ginger, and garlic in the pan until fragrant, then add some light soy sauce, oyster sauce, and a little five-spice powder.

After years of cooking, I feel that these three sauces go best together. Yingkou fermented bean paste is the most authentic and slightly salty, so adding a pack of sweet bean paste balances it out. Then add a bit of spicy mushroom sauce for an authentic taste.

Sprinkle some chopped scallions and minced garlic on top to enhance the flavor.

Bring water to a boil, then add handmade noodles and cook for 3-5 minutes.

Add some shredded cucumbers and carrots, and your delicious bowl of Zhajiangmian is ready.
