Steps for Corn and Winter Melon Soup

Step 1
Cut the corn into small pieces, peel and deseed the winter melon, wash and slice the spring onion, prepare the goji berries and dried shrimp.
Step 2
Heat cooking oil in a pot over low heat until it is 60% hot, sauté the dried shrimp, then add the winter melon and stir-fry for 30 seconds.
Step 3
Add water, bring to a boil over high heat, then simmer over low heat for 20 minutes.
Step 4
Add spring onion and goji berries in the last 2 minutes, season with salt, sugar, chicken stock, and white pepper according to personal taste, then serve once the cooking time is up.
