Ingredients for Yogurt Orange Cheesecake

Recipe for Yogurt Orange Cheesecake

1. Mix flour, 210g yogurt, 80g Polish species, 50g egg liquid, 6g salt, 65g sugar, and 160g water in a chef machine to form a dough.

After forming a dough at low speed, switch to high speed until fully blended.

Add softened butter and yeast powder, first form a dough at low speed then switch to high speed, knead until a glove film is formed (with holes as shown in the picture).

Add 120g chopped dried orange pieces.

Ferment until double in size.

1. Crush the dried orange in a blender. 2. Make the frosting: Mix 30g each of butter and milk, 20g powdered sugar, gradually add 30g low-gluten flour, mix well. 3. Transfer to a piping bag for later use.

Soften the cream cheese at room temperature, mix in milk powder, chopped 125g dried orange, and honey.

1. After fermentation, divide the dough into pieces of around 90g each, be careful not to stretch and damage the dough. 2. Roll into balls, cover with plastic wrap, let it proof at room temperature for about 20 minutes. 3. Take out the proofed dough, flatten it to release air bubbles, fold in around 40g of cheese filling, pinch the edges tightly, place in a mold. 4. Let it ferment in an environment with a temperature of around 34 degrees and 80% humidity until doubled in size, then pipe the frosting on top.

Preheat the oven to 200 degrees, place the bread in the oven, bake for 15 minutes.
