Recipe for Stir-fried Ercai with Preserved Sausage

Step 1
Prepare all ingredients and clean them.
Step 2
Slice the ercai thinly, add salt, mix well, let it sit for 8 minutes to release moisture, rinse with clean water and squeeze dry.

Make shallow cuts on the surface of the preserved sausage, place it in a steaming bowl with ginger slices and cooking wine, and steam in a steam oven [pure steam mode 100°C/5 minutes].

Remove the preserved sausage and let it cool slightly before thinly slicing it at an angle, retaining the amber-colored fat.

Heat the wok, add cold oil, and stir-fry the preserved sausage slices over medium heat until the edges slightly curl.

Add the ercai and stir-fry for 1 minute, then pour 1 tablespoon of water along the edge of the wok to generate steam, quickly stir-fry for 30 seconds.
