Ingredients for Home-style Fried Chicken Legs

Steps for Home-style Fried Chicken Legs

Step 1
Clean the chicken leg, put it in a pot with chopped scallions and ginger, blanch with a bit of cooking wine to remove any odor, remember to remove the foam after the water boils
Step 2
After blanching, take out the chicken leg, wash it clean with hot water to prevent the meat from becoming tough
Step 3
While blanching the chicken leg, cut the potato into pieces, and the green and red peppers into chunks
Step 4
Caramelize the chicken leg, heat oil in a pan, add rock sugar, keep the heat low, continuously stir-fry until it turns a jujube red color, then add the chicken leg (self-taken, worried about frying too much, didn’t have time to take a picture)
Step 5
Once the chicken leg is browned, add the ingredients, stir-fry until fragrant, then add cooking wine, dark soy sauce, oyster sauce, light soy sauce, mix well, add hot water that covers the meat, then simmer over medium heat for 15 minutes
Step 6
After 15 minutes, add the potatoes and continue to cook for about 10 minutes, depending on whether you prefer them soft or slightly crispy

Add the green and red peppers, stir-fry evenly, taste for seasoning, add a bit of salt if the flavor is not strong enough, mine was just right, then turn off the heat and serve
