Ingredients for Zucchini Egg Noodles
Zucchini 1 piece | Eggs 2 |
Needle mushrooms 50g | Salt 2 tbsp |
Cooking oil 1 tbsp | Water 3-4 bowls |
Instructions for Zucchini Egg Noodles

Step 1
Beat two eggs in a bowl and set aside.
Step 2
Wash the zucchini and slice it for later use.
Step 3
Wash and cut the needle mushrooms into small pieces for later use.
Step 4
Heat oil in a pan, pour in the beaten eggs, and fry on low heat.
Step 5
Gently push the egg mixture around and continue to fry on low heat.
Step 6
Fry until both sides are golden brown, then remove and set aside.
Step 7
Start cooking the noodles and set aside after cooking.

After the noodles are cooked, place them in cold water to prevent them from absorbing the broth and to improve the texture.

Heat oil in a pan, stir-fry the zucchini for 2-3 minutes, adding a little water midway to prevent burning.

Pour in 3-4 bowls of hot water, cover and cook for 2-3 minutes.
Step 11
Add the fried eggs and needle mushrooms, cover and cook for 2-3 minutes, then season and serve.
