Steps to Make Home-style Braised Pork Belly

Step 1
Choose a beautiful piece of pork belly with alternating layers of fat and lean meat. Wash it clean, place it skin side down in a non-stick pan, and cook until the skin is slightly charred. Then, cut it into evenly sized pieces.
Step 2
Without adding oil, fry the pork belly until it reaches the desired state as shown in the picture.
Step 3
After frying all the pork belly pieces, remove them and do not pour out the oil in the pan. Continue by adding rock sugar and fry until it caramelizes.
Step 4
Add the fried pork belly back into the pan and stir-fry until it is evenly coated with the caramelized sugar. Add ginger slices, then dark soy sauce and light soy sauce, stir-fry evenly. Pour in boiling water that covers the pork belly twice the amount. It is crucial to use boiling water here. The meat will cook quicker with boiling water; using cold water will increase cooking time.
Step 5
When the water is almost dried out, add salt to taste, stir well over high heat to thicken the sauce. The simple yet delicious home-style braised pork belly is now ready, with a rich aroma and not greasy at all!
